About the job
Your tasks: You shape the culinary identity of the resort and each outlet, develop new menus, concepts and event menus, standardise recipes and produce banquets for up to 300 guests and outdoor services. You lead a brigade of about 40 people across four kitchens, plan selection, training and rosters and control budget, food cost, waste and inventories. You also handle purchasing and suppliers, product quality, food safety (HACCP, allergens) and audits, more sustainability with less waste and local seasonal produce, and coordination with F&B, events, service, purchasing, HR and maintenance. You report to the hotel manager and general manager.
What you bring: At least five years leading kitchens in resorts, luxury hotels or high-end restaurants, with a demonstrable record of your own menus and concepts (guide awards are valued). Experience in volume production and multi-outlet operations, command of costs and leading brigades of 30 or more. High-level Spanish and advanced professional English.
